The once-abandoned medieval cellar, where wine used to age in the time of Catholic Kings, is the heart of Bodegas Mocén. The estate was purchased and restored in 1988 by visionary restaurateur Jose Luis Solaguren, along with 140 hectares of prime vineyard land. Vineyards are planted 740 – 760 meters high to encourage balanced acidity. The average vine age is 27 years, giving depth and structure to the juice. Typical vine spacing is 1.5 x 3 meters, as close planting intensifies grape flavors. Soils of silt and sand with loose pebbles force the plants’ roots to dive deep, enhancing minerality.
