Prior to harvest, we discuss which grapes to pick and which to leave. We use only healthy grapes that have been through the selection process twice-- once on the vineyards and then on the selection table. We then collect in plastic crates and harvest at night to avoid immediate fermentation.
Alcoholic fermentation comes spontaneously after macerate the must for few hours.
No artificial yeast or additives are added during the elaboration of the wine. Just the minimum sulphite mandatory by the Denomination of Origin to age in oak barrels without any problem.
The result of our production method without human intervention are very natural and healthy wines.
