This is the winery's emblematic wine. It is a 100% Verdejo monovarietal from our own vineyards. Each of the plots is hand-harvested and then the lees are fermented and aged separately in French oak barrels.
Spontaneous, controlled alcoholic fermentation.
At the end of the 10-month ageing with lees, a selection and "assemblage" is made. The entire production is bottled at the same time and stays at in the bottle at least 5 months before going onto the market. This wine is crafted to be consumed within 6 to 8 years, when it will display all its qualities.

|Soil Composition:||They are primarily made of a layer of pebbles around 10 to 60 centimeters thick, a layer of clay subsoil and a deep layer of limestone. In each of the plots, there is a mix of variable percentages of pebbles, sand, clay, and limestone (this latter case in lower proportion) which gives each of the musts a personality and style of its own.|
